Spanish Delight Protein Cups Recipe

I have fond memories of my grandmother making a casserole dish which she lovingly called, “Spanish Delight.” The flavors of this childhood favorite hold a strong, comforting memory for me. These muffin cups remind me of those same festive flavors… with minimal effort. Customize them as you wish with the add-ins you have on hand… and make a few extra, as they make great lunches on the go!

1/3 cup oats, gluten free if needed
1 tablespoon chia seed
1 scoop Nuzest Just Natural Clean Lean Protein
1 tablespoon nutritional yeast
1/2 teaspoon baking soda
Pinch of salt
6 tablespoons vegetable broth, low sodium
2 tablespoons tomato sauce
1 tablespoon olives
1 tablespoon chopped pepper
1 tablespoon chopped cilantro
1 tablespoon diced tomato
1/2 teaspoon cumin
1. Add all dry ingredients into a high powered blender using a dry blade container. Process until coarsely ground.
2. Remove from blender into a small mixing bowl and combine with remaining ingredients.
3. Coat 2 ramekins with oil and divide mixture between each. Microwave on high for 2:30.
4. Let cool slightly, carefully remove from ramekin, and serve garnished with pico de gallo and lime.
