Vegan Protein Balls Recipe
These protein-packed protein balls are great tasting and super healthy for any day. Add on some bunny ears and they are perfect for your Easter dessert table!
1/2 cup coconut milk or cream
3 scoops Clean Lean Protein Wild Strawberry
1/4 dragon fruit (with pink flesh inside ‚Äì for the colour)
1 cup desiccated coconut
3 Medjool dates
1 Tbsp. maple syrup
Filtered water, if needed for desired consistency
2 Tbsp linseeds
1/2 cup activated buckwheat
1/2 cup cashews
1. Blend all ingredients except the buckwheat into a food processor.
2. Add and fold in buckwheat.
3. Roll the mixture into balls and roll into desiccated coconut or topping of choice.
4. Refrigerate prior to serving OR freeze up to 5 days if you are not ready to eat.
