vanilla oatcake

VANILLA OATCAKE

Ingredients

  • 1 cup dry oats
  • 1 serving Smooth Vanilla Clean Lean Protein by Nuzest
  • 1 ripe banana
  • 1 Tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp apple cider vinegar
  • 1 cup almond milk
  • 1 Tbsp cashew butter
  • Optional: 1-2 Tbsp coconut sugar or maple syrup, if extra sweetness is desired, and 1-2 tsp vanilla extract for extra flavor

Method

  1. Add all of the ingredients into a blender (pour wet ingredients first so the dry ingredients don't stick to blender).
  2. Blend until batter is smooth. If the mixture is too thick, add 1 Tbsp of liquid at a time until it reaches the desired thickness.
  3. Cook in pan at medium heat until bubbles form, then flip and cook for another 30 seconds or so.
  4. Topping suggestions: Cashew butter, chocolate sauce (maple syrup mixed with raw cacao powder), hemp-seeds, fresh strawberries.

  • 4-5 flax eggs

  • 1 tsp baking soda

  2. In a large bowl, whisk the bananas into a mush. Add in and whisk the flax eggs, vanilla extract, and melted coconut oil.
  3. In another bowl, combine the coconut flour, tapioca flour, Clean Lean Protein and baking soda until completely mixed. Use a hand mixer to combine the dry ingredients into the wet ingredients.
  4. Allow the batter to rest for 3-5 minutes. Grease the skillet with coconut oil.
  5. Pour batter into the greased skillet and make the desired sized pancakes. After about 2 minutes (depending on how soft you want the inside), flip the pancake to the uncooked side. Allow the pancake to cook for another 1-2 minutes, then remove and repeat until your batter is finished.
  6. Serve with 100% pure maple syrup.
