TIME:10 mins, SERVES:2

What if I told you that in just a few minutes this evening you could prep a delicious & nutritious breakfast reminiscent of Reese's Peanut Butter Cups that would be ready to go for the rest of the week? Read on to learn how to make Reese's Peanut Butter Cup Proats. Yup! That’s the beauty of these make-ahead protein oats. Honestly, there are few breakfasts as simple & satisfying. You just mix the ingredients together the night before & they soak while you sleep. This chocolatey nut-free porridge tastes rich and decadent but happens to be absolutely packed with all the goods — vitamins & minerals, antioxidants, fibre, healthy fats, protein, adaptogens, and pre & probiotics, too!

Crazy for Cacao

The “chocolate” in here is actually cacao. Cacao is the purest form of chocolate we can consume. It is free of all the unhealthy sugar and other additives found in most processed chocolate. Better still, cacao is loaded with minerals such as magnesium and iron, as well as health-promoting flavonoids. These powerful antioxidants are believed to help reduce the risk of hypertension, diabetes, cardiovascular disease, and cancer. And raw cacao actually makes us feel good! It has probiotic effects and has been shown to interact with the gut-brain-axis to trigger the release of natural feel-good chemicals in our bodies such as serotonin and phenylethylamine (PEA). PEA is the same neurotransmitter that is released when we fall in love!

In the Mood for Maca

Maca is a great superfood booster and its slightly earthy, butterscotch taste blends well with chocolate and coffee. In addition to providing extra vitamins and minerals, maca is recognized as a herbal "adaptogen". This means it helps the body to regulate cortisol levels and deal with stress. And I used that expression for a reason! Maca may actually help to relieve anxiety while boosting mood, energy, concentration, and even libido. This recipe was created by @DrTaraSunshine.

Ingredients

2/3 cup gluten-free rolled oats

1 scoop Nuzest Clean Lean Protein in natural, vanilla or chocolate

2 Tbsp chia seeds

2 Tbsp gluten-free shelled hemp seeds

1 1/3 cups non-dairy milk (nut-free if needed; I use at least half full-fat coconut milk for extra creaminess)

1/4 cup sunflower seed butter (organic Sunbutter or homemade)

2 Tbsp raw cacao powder

2 tsp gelatinized maca powder (optional)

1/4 tsp sea salt

Pure stevia, monk fruit sweetener, or sweetener of choice to taste

Method

1. Combine oats, Nuzest protein, chia seeds, and hemp seeds in a bowl or divide evenly into single-serving mason jars. Stir well to combine.

2. Put non-dairy milk, sunflower seed butter, cacao, maca and sea salt into blender container and blend until smooth. Sweeten to taste.

3. Pour chocolate "smoothie" over the oat and seed mixture and stir well to combine.

4. Cover and refrigerate overnight (or for a minimum of 6 hours). Before serving, stir in additional non-dairy milk as needed for desired consistency.

Reese's Peanut Butter Cup Proats can be stored in an airtight container in the fridge for up to 5 days. Heat or serve cold with your choice of toppings. Enjoy!
