Are you a sucker for anything caramel? Caramel apples… chocolate covered caramel candies… caramel apple pie. Aren't they all delicious (although far from nutritious!)? Here is a recipe makeover where caramel meets cereal, formed into a fun pumpkin share that is great for fall and Halloween. The results are strikingly reminiscent of a favorite cereal childhood treat, and the added protein in these rice treats is a surprising bonus!

Ingredients

1 teaspoon lucuma powder

1 scoop Nuzest Smooth Vanilla Clean Lean Protein

1/4 cup coconut oil

1/4 cup coconut nectar

1 tablespoon alcohol free vanilla

1 teaspoon unsulfured molasses

Pinch of salt

2 cups brown rice krispies cereal (gluten free if needed)


Method

1. Add all ingredients, minus cereal, to a medium saucepan and cook on medium low heat for 10 minutes. Stir constantly.

2. Remove from heat and stir in cereal until well combined.

3. If making a plain batch of treats, pour contents into a parchment lined 8X8 baking dish pressing firmly and place in freezer for up to 15 minutes to firm. If shaping into acorns, use a silicone muffin tray and firmly pack two muffin cups per acorn. Place in freezer for 15 minutes. Remove from freezer and press halves together to form an acorn shape. Dip in chocolate, cover with hemp hearts and use the end of a pretzel for a stem.

4. Keep remainders in the refrigerator for up to three days.
